 Total Polar Materials (TPM), also called Total Polar Compounds (TPC), is the main measurement used by most modern cooking oil testers. It is the most accurate and reliable way to determine how much the frying oil has deteriorated and when it should be replaced.

High TPM levels mean the frying oil has deteriorated. This can reduce the taste, texture, and appearance of fried food, increase frying time, and may also pose potential health risks.
